Blueberry Banana Beet Healthy Popsicles for Kids

Healthy popsicles are an excellent alternative to enjoy an afternoon out. Especially now that the sun has finally come out where we lived and we’re slowly but surely getting summer temperatures, after a weird few months that looked like winter.

Now my little baby girl only wants to be outside and spend the day at the playground. It also means I gotta get creative and come up with new snack ideas to refresh her insatiable palate and keep her cool.

I’m a big believer of including veggies in any way possible in my kid’s’ nutrition. That’s why I enjoyed making these “BBB” Blueberry Banana Beet Popsicles or Paletas. It was a fun flavor experiment!

Why I love these healthy popsicles?

  • No added sugars! So hard to find a sweet treat these days that only has the natural sugars in fruits or veggies! The paletas are still sweet though, thanks to the beets!
  • Rich in not only veggies but also healthy fats
  • It has the perfect combination to be both a dessert following a meal or a snack (or even breakfast, if you add a side dish with more protein and carbs!)
  • Rich in antioxidants thanks to the blueberries and the chia seeds!
  • You can make them in less than 15 minutes!

The only reason I think one could shy away from trying these healthy popsicles with their kid is maybe the fear of staining their clothes but hey,  there are a TON of options for stain removers to keep children’s clothes intact and you could also use a bib or have them enjoy the popsicles without a shirt on!

As you can tell, my toddler really enjoyed the flavor of these paletas. I fed her many spoonfuls of the mix while I was making them and she enjoyed these more than the final product. She is still not too much into frozen treats but she’s slowly getting the gist of them. She prefers munching on them rather than licking so she, of course, received a brain freeze from trying!

If your baby or toddler is the same as mine and cannot tolerate frozen things, you can certainly use the mix to make a smoothie! It’ll be just like the traditional banana milk smoothies we had as kids, only healthier!

So next time you want to add a twist to the usual fruity paletas, put some veggies in them and make healthy popsicles! I think these would also work with other vegetables that are on the sweeter side, like carrots! Mmm, we’ll leave that for a future experiment! Blueberry Banana Beet Healthy Popsicles (Paletas)

Keep your baby or toddler cool this summer with these healthy popsicles! Try these Blueberry Banana Beet Paletas as a snack or dessert!

Equipment

  • Popsicle mold

Ingredients
  

  • 2 oz 2 oz organic greek yogurt (full fat but you may use nonfat for an adult version!)
  • 2 oz 2 oz organic whole milk
  • 1 ½ organic ripe bananas
  • 1 cup 1 cup of organic beets, washed and steamed/boiled
  • 1 cup 1 cup of organic blueberries
  • 1 tsp 1 tsp vanilla extract
  • 1 tbsp Chia seeds

Instructions
 

  • In a blender, add all the ingredients except a few blueberries and chia seeds
  • Blend it all together!
  • Before adding the paleta mix in your molds, add a few blueberries and chia seeds.
  • Add then some parts of the mix and repeat with the blueberries and chia seeds; this will serve for a decorative touch!
  • Make sure to tap the popsicle molds against the counter a few times to release air bubbles and even use a toothpick or skewer to make sure the mix is spread evenly.
