People are getting crazy about pumpkins already, but you don’t need to have a mess at home to enjoy these pumpkin fries recipe!
You know when you buy too many pumpkins to decorate your house for the Fall… and then Fall passes…and they just clutter your space and stop you from moving unto the Christmas decorations? What in the world are you supposed to do with them?
Well, I know it’s tempting but… don’t throw them away!
They still have a chance to show the world their tastiness. And I discovered a fun way to taste them: by making pumpkin fries!
When I first told somebody about this they were like : “huh.. fries?” And yes, it’s something that you don’t see everyday but trust me, they’re SO GOOD.
I think you can make fries out of anything you set your mind to 😉
My no-waste food commandment also empowered me to make crisps out of the pumpkins’ skin. They turned out to be softer than I expected, but maybe it’s because I put too much olive oil. I also recommend to bake the pumpkin seeds with sweet or savory seasonings (couldn’t include it in the video because it would’ve been too long!).
EXTRA TIP: I later learned (thanks to “The Art of Doing Stuff” blog) that you can make your fries more crispy by coating them with cornstarch.
Important note about the cutting of the pumpkin: BE PREPARED TO PUMP SOME ARM MUSCLE. Seriously, cutting a pumpkin is no easy feat, but you could make it easier with a very sharp knife (I used what I had!) and by pushing the knife up and down as if you were hammering it into the pumpkin.
It IS a lengthy process, but it’s totally worth it!
Finally, because I’m a fan of possibilities, here are some extra dip combinations that I’ve tried…
Sweet dips:
-⅓ cup Maple syrup + ½ cup nonfat yogurt
-¼ cup low fat mayo + ¼ Dijon mustard + 2 Tbsps. honey
Savory (personally, I liked these better than the sweet ones) dips :
–Onion powder + sour cream
-½ cup Greek yogurt + 2 tsp. shredded parmesan + 1 tsp rosemary

Pumpkin fries and crisps
Ingredients
- 2 small pumpkins (small squashes will do to)
Pumpkin Crisps
- 1 tsp of garlic powder
- 1 tsp of salt
Pumpkin fries seasoning
- ¼ tsp of cayenne pepper
- 2 tsps of turmeric
- 2 tsps of garlic powder
- Salt & pepper
Instructions
- Remove the stem cutting an imaginary perimeter around it, piercing the top of the pumpkin with a sharp knife. Once you make a full circle, it will be easy to pull the stem out.
- For the crisps, peel the pumpkin using a potato peeler. When you finish, put the pumpkin shaves aside.
- Cut the pumpkins in halves so that it's easier to remove the seeds from them. Then, carve the inside of each pumpkin with a spoon. You can save the pumpkin seeds bake them with savory seasonings. They make for a yummy snack.
- Use your best knife to cut the pumpkin into wedges, cutting first into large chunks.
- Preheat the oven to 375 °F while you season the crisps and the fries.
- Place crisps and fries in separate bowls. Pour olive oil on them and add your favorite seasonings. I used garlic powder and salt for the crisps. For the fries, I used garlic powder, turmeric, and cayenne pepper. Finally, add salt and pepper to taste and mix well in each bowl with your hands.
- Lay the fries and the crisps on separate baking sheets, lined with parchment paper.
- Put the fries and the crisps in the oven for 30 to 40 minutes.
- In the meantime, you can make some of your favorite dips. I made a sweet one with Maple syrup and yogurt, and a savory one with onion powder and sour cream.
- Serve and snack as you like!

I couldn’t tell in the video what temp to cook it on and is the 1tsp of garlic Garlic salt? How much olive oil?

Hello! Thanks for watching! You have to bake them at 375F. For the garlic salt I added 1 tsp but it depends on how salty you like to eat your fries (you can top ’em off with more garlic salt at the end if necessary). For the olive oil you need just enough to coat them so that they don’t stick to the pan – I’d say about 1/3 of a cup!
