Easy and delicious recipes for Lent

Finding easy and delicious recipes for Lent can be hard. But it shouldn’t be that way. For the last few years, I tried quite a few vegetarian and vegan recipes that are perfect for the occasion.

The plant-based recipes I’m going to show you will impress even the most picky guest. As good as their taste, is that you won’t need to break the bank, nor to spend hours in the kitchen.

My favorite recipes for Lent are:

  • Avocado and Kale Pesto stuffed Portobello Mushrooms
  • Cauliflower Tacos
  • Spaghetti Squash with Cremini Mushrooms Sauce
  • Vegetarian Chile Relleno

They aren’t only great for Lent, but are a great option for vegetarians, vegans, or anyone wanting to have a delicious meatless meal.

Stuffed Portobello Mushrooms: Mighty Ingredients that won’t let you down

In less than an hour, you can get a delicious meal with this amazing recipe. It’s splendid for Lent, but it works just fine when you want to try a lighter dish for the weekend. Moreover, it’s perfect for vegetarians, and without the parmesan it fits a vegan diet as well.

Veggie Tacos: Cauliflower isn’t boring!

Sure, I know cauliflower isn’t the hottest ingredient on the block. Still, you have to give it a try to this recipe. The seasoning and the roasted ingredients pack this taco with taste! Additionally, it’s a lot healthier than your regular taco, and you can observe Lent while enjoying a delicious meal.

Magic gluten-free Spaghetti Squash + Best Mushroom Sauce Ever

It’s hard to believe that Squash Spaghetti isn’t pasta, but it’s true!

Classic Chile Relleno Turned Into a Veggie-only dish

I love this Chile Relleno recipe because is filled with flavor and a powerful mix of ingredients. Quinoa, for instance, is one of my favorite superfoods. Along with the seasoning, and yummy veggies like mushrooms, zucchini, and tomatoes, this recipe is mouthwatering!
