I grew up in Honduras’ northern coast, where a particular palette of tropical flavors filled my childhood with refreshing, fruity sweetness. Three fruits were particularly prominent; coconuts, bananas, and pineapples, all of which grow beautifully in my home country! I tasted these in all sorts of iterations; in pieces, in topoyiyos (basically, frozen juice served in a small plastic bag), in smoothies, and as garnish or sauces in elaborate recipes. These three fruits accompanied me dearly in my youth, and today I want to turn them into a refreshing smoothie for this summer weather that refuses to let down.
This summer I discovered Tropical Passage, a sweet, fruity drink that is not only delicious and refreshing, but also takes the guilt away from consuming other drinks of its kind. Unlike its competitors, Tropical Passage is a low-sugar and low-calorie drink made with real fruit juice that works great to drink by itself, but also to turn into imaginative shakes, cocktails, slushies, and smoothies, like the one we’ll be making (recipe below!). Tropical Smoothie
Prep time: 15 min. Chill time: 4 H. Total: 4:15 H.
INGREDIENTS (makes 2 servings)
- Pineapple and Banana Tropical Passage, frozen into 10 ice-cubes
- 1 Tbsp fresh mint leaves
- 1 tsp carob powder
- 2 cups coconut milk
STEPS:
1.) Add the Pineapple and Banana Tropical Passage ice-cubes into the blender and pour in coconut milk. Hit the “smoothie mode“ on your Ninja Blender and watch it do its magic, rendering the ingredients into a perfectly textured cold smoothie.
2.) Now, simply fold in the carob powder and mint leaves. The carob is a healthy choice for boosting your recipe’s sweetness, while the mint leaves will accentuate the coolness like a soft breeze.
3.) It’s time to serve! I used a tall glass with a reusable straw and topped it off with a garnish of fresh mint leaves.
And there you go; a beautifully simple tropical smoothie, perfect for lounging beside the pool with your paperback as the hot summer weather lingers!
