Yummy Pickled Red Onions Encurtido (curtido) recipe

Encurtido o curtido is a classic topping for many dishes. Overall, we call encurtido in Spanish to any veggie marinated and preserved in vinegar.

Now, when it comes to Honduran and many Mexican recipes, pickled red onions encurtido is a great choice.

After two days of marinating, encurtido looks pink and beautiful!

Vinegar softens the onions, both in their texture and their taste. Thanks to this simple recipe, you can add a smoother onion flavor to any recipe, along with a pleasant zestiness.

To prepare this simple recipe you won´t need much. A small glass airtight container, a cutting board, and a good kitchen knife are all the gear you’ll need.

All ingredients are aromatic and strong, so it’s better to use an airtight container with a glass or a stainless-steel lid. Avoid wooden lids, as they can absorb some smells and flavor.

Regarding the ingredients, red onions, a serrano pepper, a lemon, and 2 cups of vinegar.

I like to add serrano peppers to my encurtido. They provide a mouthwatering hot and rich taste

This recipe is very easy, and the most important step is marinating. I like to marinate my encurtido for as long as 2 days, but some people think that 1 day is enough.

Personally, I use pickled red onions for many different recipes. I even love to add it to my usual avocado toast in the morning! But you can also check out my cochinita pibil and tacos de pescado recipes. This encurtido recipe is a must for both of them!

Pickled red onions encurtido (curtido)

The perfect topping for tacos and a great add-on to salads, sandwiches, or even avocado toast for breakfast.
You can have it any way you like.

Equipment

  • Glass airtight container

Ingredients
  

  • ⅓ of red onion sliced into thin strips
  • 1 serrano chili (optional)
  • The juice of 1 lemon
  • 2 cups of vinegar (enough to cover the onion strips)
  • Salt to taste

Instructions
 

  • Slice the red onion into thin strips
  • Slice the serrano chilies
  • Put the red onion and chili slices inside the jar
  • Press one lemon´s juice and add salt to taste
  • Fill the jar with vinegar, until you cover red onion and chili slices completely
  • Put the container inside the fridge for 2 days to marinate the onions and the chilies

Notes

I have used pickled red onions as a topping for fish tacos, cochinita pibil, avocado toasts, and many other dishes. Still, it’s a great topping for many other dishes and a Latino classic on its own.
I like chile serrano with my encurtido sometimes, but you can add your favorite chile to enjoy a hot punch of taste!
