Gluten Free Fruit Parfait Popsicle

July 28, 2021 by LA Cooquette | Leave a Comment

Fruit Parfait Popsicles served on a platter

A gluten-free fruit parfait popsicle is a good option for breakfast or a sweet treat.

I enjoyed creating this recipe because the summer was getting hotter while we were getting busier and busier.

When time is scarce, we can get tempted by unhealthy foods. With this recipe, you can have a quick meal to boost your energy during the afternoon or have an easy breakfast ready for a hectic morning. And all without binging in overly sweet and fatty foods!

I like the taste of greek yogurt with zesty fruits like strawberries and kiwis, but you can use your favorite fruits if you prefer.

Now that back-to-school season is approaching, they are a great option to serve early in the morning while the weather is hot.

Preparing Free Fruit Parfait Popsicles in 15 minutes

Slicing strawberries

Making these popsicles is quick. Still, you’ll need to plan ahead because the freezing time takes several hours. In my case, it’s rarely less than 5 hours.

Slicing kiwis

You don’t need to follow many rules to get pretty and delicious popsicles. I recommend adding dry ingredients first, like cereals and sliced fruits, and fill the molds with the mix afterward.

Preparing the mix

I like to use honey to sweeten this popsicles. It blends well with greek yogurt and fruits. Yet, you can use your favorite sweetener. Using a resealable bag as a pastry bag is convenient and easy. Not to mention that is a lot more affordable too.

Adding dry ingredients

If you are using popsicle molds like mine, you can add an extra bit of cereal on the base.

Pouring the mix to fill the popsicle molds

I like to add an extra crunch by covering the popsicles with shredded coconut and crushed cereals. To do so, I brushed the frozen popsicles with honey, so they cover sticks better.

And voilá!

  • ¼ tsp of vanilla extract
  • 4 strawberries
  • 1 kiwi
  • ⅓ cup of blueberries

  • ¼ cup of Gluten Free Fruity Cheerios, crushed
  • ¼ cup of shredded coconut, toasted

Instructions

  • Slice your kiwis and strawberries in ½-inch thick pieces and reserve them.
  • Add greek yogurt, honey, milk, and vanilla into a resealable bag. Close the bag carefully and shake it until well mixed.
  • Add Cheerios to each popsicle mold. Then, add blueberries, along with slices of kiwi and strawberry.
  • Cut a corner of the resealable bag to use as a pastry bag. Then, fill each popsicle mold with the mix.
  • Insert the wooden popsicle sticks in the base of each popsicle mold. Decorate the popsicle base with some extra cereal.
  • Put in the freezer for 5 to 6 hours.
  • After taking your popsicles out of the freezer, brush them with honey to decorate them.
  • Cover with shredded coconut and crushed cereal. I like the extra-crispiness and punch of taste it brings to the popsicle.
