10 Healthy Spring Recipes you will love

Having some healthy spring recipes at hand can be helpful. After winter, we might have indulged a bit too much. The cold weather is too inviting for warm, fatty, and sweet delicious meals.

Now that is warmer and our surroundings are colorful, we can enjoy different dishes that are as colorful and vibrant as the spring season.

Ensenada-Style Fish Tacos

Fish tacos are a tasty and healthy spring recipe

A few years ago I tried fish tacos (tacos de pescado) in Ensenada, the place where they originated. After a while, I decided to try and make Ensenada-style fish tacos at home and they were delicious!

Fish tacos make a good healthy spring recipe because they are colorful, fresh, and light with a lot of flavor.

I wrote a blog post about it with a step-by-step tacos de pescado recipe, so you can prepare fish tacos at home too.

Mushroom bolognese

Pasta bolognese is an easy to make and delicious option for lunch. And with this mushroom bolognese recipe you can try a healthier option packed with taste.

Using different types of mushrooms, this mushroom bolognese is rich and savory, with chunky and delicious bits. This versatile ingredient absorbs a lot of flavor, so if you don’t mind to enjoy a plant-based option, it can be delightful for you to try it.

It doesn’t only fits perfectly with plant-based diets, but it’s a good alternative to reduce excessive fat intake and other harmful aspects of eating too much meat.

Salmon and Passion Fruit Tiradito

Tiradito is a Nikkei’s classic. In a certain way, tiradito is the Japanese-Peruvian expression of ceviche. The cutting is similar to sashimi, and the original tiradito is more zesty and spicy than ceviche.

This innovative recipe using salmon and passion fruit is refreshing and surprisingly good. Ginger brings a spicy punch and reinforces passion fruit and lemon’s acidity in a good way. Overall, it’s a great spring recipe and for summer too.

On the other hand, it’s not a recipe for the most traditional tastebuds, but it’s a good dish to enjoy in spring or even the summer, when the weather gets hotter.

Spicy Szechuan Prawn

If you were looking for a delicious recipe that reminds you the seafront, these Szechuan Prawns are an exotic and delicious option.

Szechuan cuisine is among the dozens of Chinese regional cooking traditions. Yet, when we hear the word “Szechuan” we immediately think about its spicy and hot taste.

In Honduras, seafood is delicious and fresh, luckily something I grew up with. My grandmother even owned a shrimp business at some point in her life, so we would always have shrimp and prawns available for different dishes.

This recipe is a great way to enjoy prawns, which are an absolute delicacy. If you can get fresh seafood and you like hot, spicy flavors, this recipe is more than a safe bet for you.

Asian Style Steamed Salmon

Steamed recipes can be boring, but this salmon recipe is packed with taste and pleasant, soft textures.

Veggies and Asian ingredients like mirin, soy sauce, and rice vinegar work greatly combined. Additionally, as salmon isn’t a traditional fish served in Asian cuisine, it brings some innovative flavors we usually don’t taste using conventional ingredients.

Turkish Stuffed Eggplant (Karniyarik)

Turkish food has many delicious and healthy dishes. So, finding Turkish healthy spring recipes isn´t too hard.

Karniyarik is great for a family dinner and the combination of juicy and tasty ingredients works just perfect. It’s best served with rice and some Turkish families use natural yogurt along with it.

In Turkey, eggplants are abundant in the summer, but we don’t need to wait until then to enjoy this heartwarming dish.

Tomatoes, eggplants, and minced beef mix amazingly well together. Traditionally, Turkish food uses more lamb than beef, but it’s your choice. I think it’s worth trying both and experimenting a bit.

Chicken Tinga bowl

Sometimes we wish we just had a delicious meal ready to eat, right away. And a Chicken Tinga Bowl can be just that!

Sure, it’s a great idea to prepare many servings to keep them in the fridge. It’s a well-rounded and healthy recipe with all you need for a good lunch or even for dinner.

Spicy peanut noodle salad

Do you like healthy spring recipes that are sweet, creamy, salty, and savory? Then, you will love this noodle salad recipe!

The ingredients mix is counterintuitive for most, but they are delicious. Moreover, it’s a light dish with enough energy to be a proper lunch on its own. Additionally, is one of those dishes that you can prepare in advance and eat later.

Just bear in mind that it’s better to add your cilantro and avocado fresh. The fridge will ruin them in a very short time!

Healthy Spring Rolls

Ok, I will hold all the dad jokes I could imagine about spring rolls for Spring season. I’m sure you thought of a couple of them, too!

If you’re a fan of Chinese food, you know that you can have deep-fried spring rolls and that they are crispy and delicious.

This recipe includes an adaptation with creative fillings, without any frying involved, that result in healthier, and still yummy, spring rolls.

Chicken Thai Red Curry

Thai curry, like many exotic spicy dishes can be intimidating. They can be very hot and spices can be overwhelming!

I won’t lie to you, this Thai red curry recipe isn’t as strong as traditional recipes but it’s still packed with flavor. So, if you’re not used to spices and hot chilies, be careful!
