There are certain days in which I wish I could pull a string and turn off the sun.
Ok yes, that would be irrational and will eventually end the world for any creature that I know… so I guess I’ll just have to play nice with you, summer.
Or, I could cheat.
How? By staying chill with popsicles surrounding your every move!
That’s exactly what I did.
Yes, there’s still time for a popsicle recipe (at least until the sun goes away which in regular countries is usually never, but in California, it IS never).
But I wanted to move away from the usual popsicle flavors: strawberry, lemon, coconut, etc. They’re awesome, and they’re loved by many I’m sure, but why not mix it up a little bit, since you’re already being patient enough to wait for them to freeze?
Why not herb infused popsicles?
mmm so…Blueberry and Basil huh? Hey, it was unavoidable… it was destiny! I saw this awesome recipe for a Tangerine Basil popsicle and got hooked on the whole BASIL + SWEETS realm of possibilities! I thought blueberries could stand out, because green and blue definitely stand out! Oh but don’t ask me about the ginger.. I don’t even know how that got there. It just tastes… WOW.
I then thought: mmm what other plant-like individuals could infuse these summer staples? Lavender was my top choice. I’m lying, I went to this store the other day and saw some leaves and I just had to try them on something!
The thing is, life is too short for only-strawberry and only-blueberry pops. By now, I’m sure you’ve had tons! But I bet it’s gonna be hard finding someone who has tried them both… 😛
I double dare you.
Herb Infused Popsicles
Equipment
- Popsicle molds
- Food processorm, blender, or beater
- Small strainer
Ingredients
Blueberry Basil Ginger Pops
- ½ cup of blueberries
- 10 fresh basil leaves
- ¼ tsp of ginger
- 1 cup of water
- ¼ cup of sugar
- 2 tsps of lemon juice
Strawberry Lavender Lemon Pops
- ⅓ cup of strawberries, chopped in tiny pieces
- ½ tbsp of lavender
- 3 tbsps of lemon juice
- ¼ cup of honey
- 4 tsps of sugar
- 1 cup of milk
Instructions
- Mix sugar and water in a pan, and bring them to a boil. Then, add your basil leaves and leave them until they are smaller and old-looking.
- Add lemon juice and strain your basil leaves with a fork.
- Puree your blueberries with a beater, a food processor, or a masher.
- Add the basil liquid, the ginger, and blend.
- Pour into your molds.
- Before putting these popsicles in the freezer, let's continue with our other recipe.
- Start by boiling milk, honey, and lavender in a pot as if you're making tea.
- Once your lavender turns brownish, bring down the fire, and strain it.
- Grab your strawberry pieces and put them in the food processor. Leave some behind so that you can have chunky bites for your popsicles. Finally, add lemon juice to the mix.
- Before pouring the mix into the molds, add your small strawberry pieces.
- Once you have all your popsicles ready, put them in the freezer for 5 to 6 hours.
- Take them out of the freezer and enjoy them before they melt!
