Baked Pumpkin Donuts

Pumpkin donuts are easy to make and a delicious alternative to more elaborated pumpkin-based desserts. 

These donuts make for a perfect dessert, occasional autumn treat, or make for the ideal companion for a frothy cappuccino or a good mug of black coffee. And the best thing about them is that they are easy to make and only take about 15 minutes to make.

Although I like a baked alternative to deep-fried donuts, I don’t want to sound misleading. Baked pumpkin donuts are pretty sweet, so we can’t say they are a healthy option nonetheless. In short, I prefer these baked donuts because they help save oil, reduce the unhealthy fats from deep-frying, and still get a delicious sweet treat.

Tips to make baked pumpkin donuts

  • Use a piping bag to fill 2/3 of the baking pan cavities. The dough will grow while baking.
  • Create your own pumpkin spice mixing cinnamon powder, nutmeg, ground cloves, and ginger. Having each spice at hand comes in handy for other recipes.
  • Try your favorite glazings for donuts, I recommend three in this recipe, but you can try more options.

What You Need To Make Baked Pumpkin Donuts

To make these donuts, you’ll need very little equipment.

  • Donut baking pan
  • Reusable piping bag
  • Hand mixer
  • Cooling rack

Although all three are very helpful, bear in mind that the only piece of equipment that’s absolutely necessary for making the donuts is the baking pan.

Ingredients
  

Pumpkin Donuts mix

  • 1 cup of flour
  • 1 tsp of baking powder
  • ⅛ tsp of baking soda
  • ¼ tsp of salt
  • 1½ tsp of cinnamon powder
  • ½ tsp of nutmeg
  • ½ tsp of ground cloves
  • ½ tsp of powdered ginger 
  • ¾ cup of pumpkin puree
  • ½ cup of sugar
  • ⅓ cup of brown sugar
  • 2 large eggs 
  • 1 tsp of vanilla extract 
  • ¼ cup of vegetable oil 

Pumpkin spice whipped cream frosting

  • ½ cup of whipping cream
  • ½ cup of powdered sugar
  • ½ tsp of vanilla extract 
  • 1 tsp of pumpkin spice

  • ½ cup of powdered sugar
  • 2 tbsp of maple syrup
  • 1 tbsp of milk
  • ½ tsp of pumpkin spice

Instructions
 

  • Preheat the oven to 424 °F (218 °C).
  • In a bowl, mix flour, baking powder, baking soda, salt, and pumpkin spice.
  • Add pumpkin puree, sugar, brown sugar, eggs, vegetable oil, and vanilla extract in a larger bowl.
  • Now mix everything thoroughly while adding all the dry ingredients gradually. Make sure that everything mixes well.
  • Pour the pumpkin mixture into a donuts mold. You can use a ziplock bag or a reusable piping bag to control better the pouring process. Remember to fill around two-thirds of the cavity capacity because the donuts will grow while baking them. Before putting the mold in the oven, shake it a bit to level the mixture.
  • Put the donuts to bake in the oven for seven minutes. In the meantime, prepare the frostings.

Pumpkin spice whipped cream

  • Prepare whipped cream with vanilla and sugar, and when it's ready, add pumpkin spice and mix well.
  • Spread the creamy frosting on top of the donut, and then press the frosted side against a bed of crushed nuts.

  • Add milk, maple syrup, pumpkin spice, and powdered sugar into a bowl and mix well.
  • Brush the donuts with simple frosting after getting them out of the oven while they're still hot.

Chocolate frosting

  • Melt chocolate chips in the microwave. Dip one side of the donuts into the melted chocolate and then decorate with the colored sprinkles.
  • After frosting your donuts with your favorite options, let them cool on a grill. The frosting will get the desired texture and looks, so you can enjoy them along with your loved ones.
