I officially have a summer love. Name?
AVOCADO.
I realized I’m clinically obsessed with this green lover. I have used it many many times in very different ways for the past weeks (like as ceviche bowls, or to stuff Portobello mushrooms with kale!) and still can’t get enough of it!

And the thing is: who’s not up for trying new flavors? I love finding new uses to everyday ingredients, because for me that’s what cooking is all about: just a huge experiment! Sometimes you get explosions and burnt flavors… but many times, if you let avocado guide you, you get this:

Another great thing about these is that you get to save some butter (for other times when you just want to stuff yourself with fattiness…anyone?) and thus eat healthier! It’s a great substitute for many baking recipes!
Also:
-They have more potassium than a banana (eat avocados for breakfast. whaaa?)
-Each one of these babies contains 4 grams of protein (eat them before the gym. yeaah!)
-They are rich in antioxidants (eat avocado ANYTIME. Weeehee!)
It’s only a bit of a downside when you’re past your 4th or 5th brownie because you thought “oh…healthy huh? GIMMIE!”. Don’t over-indulge, they’re still brownies!
I also added some spices to the mix because I wanted them to have a little bit of kick without them actually being spicy (although there are pretty cool recipes that do it), so everyone could enjoy them.

Ingredients
(To make about 12 big, fudgy brownies with a 13×9 in. pan)

- 2 large and ripe avocados
- 8 oz of chocolate chips, melted
- 2/3 cup white sugar
- ½ cup brown sugar
- ½ cup cocoa powder
- 1 ¼ cup flour
- ½ tsp baking powder
- ¼ tsp of salt
- 1 teaspoon ground cinnamon
- 1 teaspoon ground ginger
- 1/4 teaspoon cayenne pepper
- 4 tablespoons of butter
- 2 eggs
- 2 teaspoons vanilla extract
For the lime-green avocado frosting:
- 1 avocado
- 2 cups of powdered sugar
- 1 tsp vanilla
- 1 tsp lemon juice
