Earth Day recipes shouldn’t be just colored little planets. I prefer to celebrate our planet cooking more sustainably.

Earth Day is a good occasion to celebrate with some delicious dishes to share at home. However, if we want to make an impact, consistency goes a long way. With this in mind, I hand-picked several eco-friendly recipes that we can all enjoy every day.
My personal opinion is that everyone can adopt a more sustainable lifestyle. Cutting down food waste, for instance, is crucial. Moreover, reducing meat intake although isn’t enough alone, it can help sustainability as well.
At home, we eat pretty much everything and anything. However, we enjoy both cooking recipes with leftovers and plant-based alternatives from time to time.
So, to celebrate and promote sustainability every day, I chose different courses that can fit in your breakfast, lunch, or dinner, with a couple of dessert options.
And remember, sustainability isn’t about being perfect, but about cooking and eating smarter every day.
Don’t throw your leftover rice away!
I will start with some of my own because cooking leftovers is one of the best ways to become more sustainable.
Needless to say, I enjoy all of these. Any “queso-lover” will love both the cheese rice balls and the cheeseburgers with rice buns.
The dessert is a Latino classic. Arroz con leche (rice pudding) is pretty common in Latin American homes, and it’s a creamy, delicious, hearty dessert.
And the best thing about these recipes is that they’re all quite easy to make!
Homemade Granola for Breakfast (Refined Sugar-Free)
Granola is so convenient and tasty that it can be a good snack too. However, I prefer granola for breakfast when I don’t want to spend too much time cooking. Additionally, a refined sugar-free option is great for all family members.
I picked this homemade granola recipe from Popsugar because:
- It’s easy to do
- It doesn’t have any added sugars
- It has tasty and healthy ingredients like pitted dates, cinnamon, raisins, and nuts.
Jamie Oliver’s Ultimate Veggie Burgers
I like this veggie burger recipe because it’s full of flavor, and it’s very unconventional.
This black bean burger has almost every possible taste and texture.
It has some crispiness from the slightly roasted burger crust and the creaminess of the avocado and the greek yogurt. Additionally, it brings together the sweetness of a mango, along with the zestiness of the pico de gallo, loaded with lemon juice and fresh tomatoes.
Some people wouldn’t add mango to a burger, but Jamie’s gave us an original spin here.
We’re all free to experiment and play with the ingredients as much as we want. You can give them your special touch too!
As Jamie said, it’s a good alternative for beef burgers because it’s tasty and rich. It’s great for vegetarians, and if you’re vegan you can adapt the recipe. You’ll only need to replace greek yogurt and cheese to make it work for you..
Pinch of Yum’s Raw Vegan Carrot Cake Bites
No-bake recipes like this are very convenient, and you can make it in a few minutes. Moreover, anyone who loves a good carrot cake can enjoy these bites.
This raw recipe has a more intense carrot flavor. White chocolate works great because it adds creaminess and extra sweetness to the mix.
These carrot cake bites can make an excellent dessert or a treat, for anytime you’d like.
Tasty’s Vegan Tiramisu
If you’re up to a more delicate and elaborate dessert, this vegan tiramisu is a great option.
It’s hard to imagine a dairy-free tiramisu, but this recipe is very creative. It gets the creaminess and softness from coconut cream and fatty cashews. It tastes different from traditional tiramisu, but I found it’s an interesting recipe to try.
And it looks delicious!
I have tried tons of recipes, but I liked pretty much this selection. As I said at the beginning, I like to cook recipes for Earth Day that are good for both us and our planet.
