This isn’t just another tuna burger recipe. This Guanaja-inspired tuna burger takes me to the Caribbean sea any time I want!
Guanaja is a beautiful Caribbean Island in Honduras that inspired me to create this recipe. I am from Honduras and I traveled there a few years ago. I loved the place and its food.

A Tuna Burger like no other
Who doesn’t want to swimming in those crystalline Caribbean waters?
Inspired by this lovely spot, I added a tropical touch here and there to the classic tuna burger. For instance, the taste and texture of coconut flour and oil brought the Caribbean touch to the tuna patties.
Onions are essential for this recipe, bringing a lot of taste and texture. Mixing the dry ingredients helps to create a more uniform patty. The eggs add a nice consistency, and the tuna patty has a croquette-ish texture inside.
Browing the tuna patties on hot coconut oil adds an extra tropical touch, with a crispy and juicy texture.
I used red onions encurtido for many recipes like Cochinita Pibil sliders, Fish Tacos, and even for my convenient and delicious avocado toast. These Tuna Burgers weren’t the exception, and you’ll know I was right to add it as a topping when you try it.
Arugula is one of those greens that aren’t that easy to fit in many recipes, but they mix very well with the tuna patty and the chipotle mayonnaise.
Finally, avocado brought its unique creaminess and taste to this burger.
The best thing about this recipe is that it’s easy to make, and it won’t take you too long to cook it.

Guanaja-Inspired Tuna Burgers
Ingredients
- ½ cup scallions, chopped
- ½ onion, chopped-
- 1 tsp of Dijon mustard–
- ⅓ cup of panko (or bread crumbs if you can't find panko)
- ⅓ cup of coconut flour
- 1 tbsp of coconut oil
- Salt and pepper to taste
- 2 eggs
For the hamburgers
- 5 brioche hamburger buns, toasted in a little coconut oil.
- Chipotle mayonnaise: 1/2 cup of mayonnaise + 2 chipotles in adobo sauce, finely chopped.
- Arugula leaves
- Avocado slices
- Pickled red onions (encurtido)
Instructions
- Place the dry ingredients in a bowl and mix them well.
- Add the eggs and mix until you obtain a uniform and consistent patty.
- Grab a handful of the mix and shape the tuna patty.
- Brown the tuna patties on a hot pan with coconut oil. Turn each tuna patty carefully so that they don't break apart.
- Prepare the chipotle mayonnaise in the meantime, mixing the chipotle in adobo sauce and the mayonnaise.
- Before assembling the burgers, toast the buns with coconut oil and spread chipotle mayonnaise on each side.
- Take the bottom half of each bun and make a bed with arugula. Over it, place the tuna patty. Top the tuna patty with encurtido and avocado slices, and put the top bun on your burger.
- Grab your tuna burger and have a taste of the Caribbean!
