Food travel to the sea with these Tuna burgers inspired in Guanaja. I named them after the beautiful Guanaja Island, Honduras, and they have that tropical taste we all love.

Place the dry ingredients in a bowl and mix them well.
Add the eggs and mix until you obtain a uniform and consistent patty.
Grab a handful of the mix and shape the tuna patty.
Brown the tuna patties on a hot pan with coconut oil. Turn each tuna patty carefully so that they don't break apart.
Prepare the chipotle mayonnaise in the meantime, mixing the chipotle in adobo sauce and the mayonnaise.
Before assembling the burgers, toast the buns with coconut oil and spread chipotle mayonnaise on each side.
Take the bottom half of each bun and make a bed with arugula. Over it, place the tuna patty. Top the tuna patty with encurtido and avocado slices, and put the top bun on your burger.
