Remove the stem cutting an imaginary perimeter around it, piercing the top of the pumpkin with a sharp knife. Once you make a full circle, it will be easy to pull the stem out.
For the crisps, peel the pumpkin using a potato peeler. When you finish, put the pumpkin shaves aside.
Cut the pumpkins in halves so that it's easier to remove the seeds from them. Then, carve the inside of each pumpkin with a spoon. You can save the pumpkin seeds bake them with savory seasonings. They make for a yummy snack.
Use your best knife to cut the pumpkin into wedges, cutting first into large chunks.
Preheat the oven to 375 °F while you season the crisps and the fries.
Place crisps and fries in separate bowls. Pour olive oil on them and add your favorite seasonings. I used garlic powder and salt for the crisps. For the fries, I used garlic powder, turmeric, and cayenne pepper. Finally, add salt and pepper to taste and mix well in each bowl with your hands.
Lay the fries and the crisps on separate baking sheets, lined with parchment paper.
Put the fries and the crisps in the oven for 30 to 40 minutes.
In the meantime, you can make some of your favorite dips. I made a sweet one with Maple syrup and yogurt, and a savory one with onion powder and sour cream.
Serve and snack as you like!
